Hanukkah, the “holiday of lights”, is one of my favorite holidays of the year. Gathering with family and friends for 8 nights to light the Menorah candles brightens our nights, warms our hearts and fills them with joy. We light the Menorah for 8 days to commemorate the miracle of Hanukkah: when the Maccabees liberated the Temple in Jerusalem in the 2nd century BC, they found oil sufficient to light the Menorah for one day, the oil, however, miraculously kept the Menorah lit for 8 days.
It’s a holiday that brings people together, and as usual, food is playing a big part in it. Since Hanukkah celebrates the oil miracle, traditional Hanukkah foods are, you guessed it, fried. On the savoury side, Latkes, are traditional potato small pancakes, often served with a yogurt dip. On the sweet side, Hanukkah’s star is the Sufganiya (in plural: Sufganiyot) – a round, puffed doughnut traditionally filled with strawberry jam and topped with sugar powder. Today Sufganiyot come with all different fillings and toppings.
This year, I’ve been working hard on my Sufganiyot recipe, and created a collection that combines the traditional donut with some of my favorite desserts and flavors:
- Tarte au Citron – lemon cream, Italian meringue and lime zest
- Cheesecake – cheesecake cream, blueberry-cassis coulis and orange crumble
- Banoffee – Salted caramel cream, caramelized bananas & pecan, cacao crumble & crispy coconut
- Chocolat & Praliné – chocolate ganache, praliné cream & hazelnut
- Black sesame – black sesame cream & chocolate topping.
